Syrah (early 1990s) from decomposed granite soils on 6 plots total 2.6 hectares at 150-300 metres, crop cooled pre-fermentation 4 days, destemmed, crushed, 4-5 week steel vat vinification at up to 26°-28°C, cultured yeasts, pumping overs, cap punching, aged new 228-litre oak casks 10 months, regular lees stirring, unfined, unfiltered, "drink with red meats, game, mature cheese", 6-7,000 b

2015 ()

(casks) very dark robe, black almost all through. There is much oak on the nose, hence a chocolate connection, not much linkage to the terroir. There is a coated aroma of black berry fruit within, heavily camouflaged by the oak, and some Marmite stock. The palate gives a glistening run of black cherry fruit with oak impinging early on, and sending us into pine woods, varnish, before the finish. What a man made construction here: it’s far from being a clear country wine from the Ardèche foothills. 14.5°. 6,000 b. From 2020. 2027-28 Oct 2016
